Brown Sugar Buttercream Icing

Ok so I am not a baker by any stretch of the imagination, but I have a severe sweet tooth so I am trying to expand my culinary repertoire. I have taken tips from all star bakers like Duff Goldman, Buddy Valastro, and Tina Verrelli, I have come up with a great buttercream for everything from cakes and cupcakes to sugar cookies and doughnuts.

So first lets talk about what buttercream is. The simplest definition is a mixture of butter and sugar that has been creamed together to make a fluffy frosting. The great thing about buttercream is that it is essentially a blank canvas, you can add any flavor or extract you like, in the case a brown sugar.

For starters you need to get 2 sticks of butter soften by setting them on your kitchen counter until soft (usually about 30-45 minutes). Now if for some reason you cannot wait for 30-45 minutes take a drinking class (large enough to cover a stick of butter standing vertically), run hot water from your tap and fill the glass. Dump out the water then turn the glass over and cover the butter and the residual heat will speed up the softening.

Once the butter is soften place it in a bowl and using either a hand mixer or a stand mixer cream the butter together with 1/2 cup of light brown sugar. Add 2 teaspoons of vanilla and continue to mix until it is completely combined with the butter and brown sugar. Slowly add 4 cups of confectioners sugar, I recommend adding it a half cup at a time until all the confectioners sugar is combined. Continue to mix until creamy.

Now here is a weird step but it is integral to the flavor. Add 3 tablespoons of cola. This will give the buttercream a nice depth of flavor yet doesn’t make the buttercream taste like cola.

Now slowly add milk a teaspoon at a time until you get the consistency you desire. The more milk you add the fluffier it gets, I like mine a bit more stiff so I only add 2-3 teaspoons.


  • 1 cup of butter softened (2 sticks)
  • 1/2 cup light brown sugar
  • 2 teaspoons vanilla
  • 3 tablespoons cola
  • 4 cups confectioners sugar
  • 1 cup milk


  1. Cream together in a stand mixer or in a large bowl with a hand mixer softened butter and brown sugar
  2. Add vanilla and continue to mix until completely combined
  3. Slowly add confectioners sugar 1/2 cup at a time until all is combined, continue to mix until creamy
  4. Mix in cola
  5. Add milk a teaspoon at at time until it reaches the consistency you wish
