With winter arriving it is for hearty warming meals, during the colder months we do a lot of braising. Braising is a combination-cooking method that uses both wet and dry heats: typically, the food is first sautéed or seared at a high temperature, then finished in a covered pot at a lower temperature while sitting in some amount of liquid.
One of our newest favorites is pot roast braised in BBQ sauce. Very little prep time is involved with this recipe maybe 15 minutes and then just over 2 hours cooking time in the oven. We like it with baked potatoes and veggies, but there are many possibilities with this. A good one would be to serve the pot roast over a bed of mashed potatoes. You could add some chopped broccoli to the braising beef for the last 30 minutes and serve with rice. Really the serving possibilities are endless.
Start with a 2-3 lb chuck roast with good marbling. Set the beef out of the refrigerator and allow to come up to room temp, about 30-40 minutes. After allowing the meet to rest it is time to start the simple prep. Pre heat the oven to 325, heat 2 tbsp oil in a dutch oven over medium high heat. roughly chop a medium onion and smash 3 cloves of garlic. Pat dry the chuck roast with paper towels. Liberally season the chuck roast with salt and pepper. Once the oil in the dutch oven begins to shimmer add the chuck roast to the dutch oven. Using tongs brown the chuck roast on all sides, about 90 seconds to 2 minutes per side. Remember to brown the edges not just the top and bottom.
Add the garlic and onion to the pot then pour in a bottle of you favorite BBQ sauce, I like a good bourbon flavored sauce.
Place the lid on the dutch oven , place it in the oven and cook at 325 for 90 minutes. After 90 minutes remove the lid and cook uncovered for another 40 minutes. Remove from the oven and serve.

- 2-3lb chuck roast
- 2 tablespoon oil
- 1 medium onion
- 3 cloves garlic smashed
- 1 bottle BBQ sauce
- salt and pepper
- Pre heat oven to 325
- add 2 tblsp oil to dutch oven over medium high heat
- rough chop the onion and smash the garlic cloves
- season chuck roast liberally with salt and pepper
- sear chuck roast in dutch oven on all sides
- remove from the heat
- add garlic and onion
- pour in entire bottle of BBQ sauce
- cover and place in oven for 90 minutes
- remove cover and cook for additional 40 minutes
