I have stated many times that I am not a baker, but lately I have been working on my baking skills more and more. I really admire the scratch bakers that make such delicious treats, but sometimes I feel like their recipes are so complex and with baking you must be so precise and accurate. Therefor most of the baking I do comes from experimenting with box mixes. Now this recipe is not from a box mix but it is very simple like the Fudgey Gooey Brownie recipe you can find here.
If you, like myself, are crazy for good white chocolate you will love these blondies.
The crazy thing about these are that they are not just substituting vanilla for the cocoa in a brownie recipe and adding white chocolate chips to the batter. Actually we are going to melt white chocolate and use the melted white chocolate in the batter.
So let’s get into this simple recipe.
Preheat oven to 350.
Start off by melting 6 oz of white chocolate chip along with 1/2 cup of butter (1 stick) in a double boiler over low-medium/low heat.
A double boiler is any metal or glass bowl that fits snugly over the top of a saucepan can be used. You could use a microwave to melt the white chocolate but I have always had bad luck using the microwave method, it always tends to scald the chocolate.
Using a wooden spoon gently mix the melted white chocolate and the butter until combined and creamy remove the close bowl from your double boiler. Add 3/4 cup granulated sugar, 1 teaspoon vanilla extract, 1/2 teaspoon salt and 2 eggs. Combine with a hand mixer.
Using a spatula or wooden spoon fold into the batter 1 and 1/4 cups sifted flour.
Next to really take it over the top mix in 6oz of white chocolate chips to the batter. Pour the batter into an 8×8 pan. I use a silicone baker if you are using a glass or metal baker I recommend greasing the pan and lining the bottom with parchment paper.
Place on rack in the oven, I find the second from the top rung is best, at 350 for 28 minutes or until a toothpick inserted into the center comes out clean. Remove from oven and allow to cool in the pan for 16 -20 minutes. Once cool remove and cut.
- 1/2 cup unsalted butter
- 12oz white chocolate chips (divided)
- 3/4 cups granulated sugar
- 2 eggs
- 1/2 teaspoon salt
- 1 teaspoon vanilla extract
- 1 1/4 cup all purpose flour (sifted)
- preheat oven to 350
- melt 6oz white chocolate and 1/2 cup butter in double boiler
- mix melted white chocolate with sugar, salt, vanilla extract and eggs
- fold in flour
- add remaining white chocolate chips
- pour batter into 8×8 baker and place in 350 oven on center rack
- bake for 28 minutes or until toothpick inserted into the center comes out clean
- remove from oven allow to cool in pan
- cut into squares and enjoy
